our concept is simple - farm to table, attention to detail and culinary story telling.

sustainability will forever be our goal, and we know that where your food comes from matters. although we may be remote, we aim to lower food miles where possible.

we are dedicated and passionate about our intimate dining experience.

The Menu

synonymous with the journey guests take to stay here, dining at The Table is about the journey through the history of the station and the ethos behind the ingredients sourced. our head chef and pastry chef, Toby and Maree Fisher, create everything from scratch with passion and their signature flair. the menu is designed to modernise traditional dishes that would have been enjoyed in the old days on the station.  although the menu is contemporary, it sympathises with the surroundings and retains its Bullara heritage.

 

Toby takes pride in ensuring that all the ingredients are sourced as locally as possible, and from the best producers in WA that have a similar farming ethos as the station has here. fresh produce is sourced from Borich and Sons in Carnarvon, so the menu is always adapted to what is fresh and in season. our location beside the Exmouth coastline allows us to source the freshest seafood straight from the local boat, and of course our beef is from the Station itself. after working in the South West, Toby has developed great connections with the lamb producers around Albany, meaning that we have direct access to the premium grass-fed lamb from there too. 

this culminates into the best ingredients creating the most incredible dishes. 

 

the concept of the experience stems from the traditional practice of campers mingling around the campfire and making connections with new people. to reflect this, guests dine at The Table together at shared tables. it's a dinner you won't forget, making friends and sharing a remarkable, intimate experience. dining is about more than simply eating - it's the atmosphere, the people you share it with and the memories made. at The Table, there is an abundance of positive vibes only

Dinner reservations can be made from the 15th day of the month prior to your arrival

via the link provided on your booking confirmation email - “View your booking online”

or by calling our reception team on 08 9942 5938. in-house guests will receive first preference with bookings.
